Specific Product Questions
Why aren't limited edition products available all the time?
When CafePress purchases goods (like shirts, hats, etc.) to print on, they have to deal with the same issues that all retailers do: inventory costs money to buy, costs money to manage, and costs money to store.
Because of this, they can't afford to buy infinite supplies of all products. Sometimes they have to decide whether a product is worth it to sell (like stuffed bunnies at Easter), and then, if they do decide to buy them, how many they can afford to buy. Unsold inventory takes up more valuable warehouse space, and doesn't make any money.
That's why CafePress has limited edition products. If they don't think they can sell enough of an item to keep it full time, then they'll buy a certain number of them to sell, and when they're gone, they're gone.
Sometimes this is an obvious thing to do, like the bunnies at Easter. Other times, like the hooded sweatshirt's spring disappearance, it makes less sense.
Where are the hooded sweatshirts?
Hooded sweatshirts are considered a fall/winter item, and are only available during those months. (Massive storeowner complaints could possibly get them back year-round, but don't count on it.)
